Description
Razor clams in brine are a real Spanish treat, and make a great addition to any tapas spread. Serve the tender, meaty pieces of clam in a warm seafood salad with chopped tomatoes, broad beans, black olives and chorizo.
Alternatively, stir the clams through seafood pasta sauces; use to top a colourful paella dish; or serve simply on toast, garnished with caramelised garlic and a squirt of lemon juice.
